Ingredients
- 1 can chickpeas (no-salt-added, rinsed and drained)
- 2 tablespoon mayonnaise (low-sodium)
- 1 celery (finely diced)
- 0.25 white onion (small, finely minced)
- 1 teaspoon dried dill
- 0.5 teaspoon garlic powder
- 5 lettuce leaves (large)
Instructions
- In a medium bowl, lightly mash the rinsed and drained chickpeas with a fork or potato masher, leaving some texture. Add the low-sodium mayonnaise, finely diced celery, finely minced white onion, dried dill, and garlic powder.
- Stir everything together until well combined. Taste and adjust seasonings as needed, remembering to avoid adding salt or sugar to maintain dietary restrictions.
- Spoon the chickpea salad into the large lettuce leaves to create individual wraps. Serve immediately.
Notes
You can prepare the chickpea salad ahead of time and store it in an airtight container in the refrigerator for up to 3 days. Assemble the wraps just before serving to keep the lettuce crisp.
