Chickpea & Green Bean Masala with Fluffy Rice

  1. Combine 2 cups basmati rice with 3 cups water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, until water is absorbed. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
  2. While the rice cooks, heat 2 tablespoons olive oil in a large skillet or pot over medium-high heat. Add the chopped 1 yellow onion and sauté for 3-4 minutes until softened.
  3. Add the minced 3 cloves garlic and grated 1 inch fresh ginger. Cook for 1 minute until fragrant.
  4. Stir in 1 teaspoon ground cumin, 1 teaspoon ground coriander, and 1/2 teaspoon ground turmeric. Cook for 1 minute, stirring constantly.
  5. Pour in 1 can diced tomatoes (undrained) and add the trimmed 1 pound fresh green beans. Bring to a simmer, then cover and cook for 5-7 minutes, until green beans are tender-crisp.
  6. Stir in the rinsed 2 cans chickpeas and 1/2 teaspoon salt. Continue to simmer for 2-3 minutes, allowing flavors to meld and chickpeas to heat through.
  7. Serve the chickpea and green bean masala over the fluffy basmati rice. Garnish with chopped 1/4 cup fresh cilantro if desired.

Notes

For a thicker sauce, you can mash some of the chickpeas slightly against the side of the pan. Adjust spices to your preference.
