Ingredients
- 1.25 pound chicken breast (boneless, skinless, cut into 1-inch pieces)
- 2 tablespoon olive oil
- 1 yellow onion (medium, diced)
- 2 clove garlic (minced)
- 4 zucchinis (medium, spiralized into noodles)
- 0.75 cup chicken broth
- 0.5 cup heavy cream
- 0.25 cup Parmesan cheese (grated)
- 0.5 teaspoon Italian seasoning
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper (freshly ground)
- 2 tablespoon fresh parsley (chopped)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken pieces and season with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- Add the remaining 1 tablespoon olive oil to the skillet. Add the diced yellow onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another 1 minute until fragrant.
- Pour in the chicken broth and heavy cream, scraping up any browned bits from the bottom of the skillet. Stir in the dried Italian seasoning and remaining salt and pepper. Bring to a gentle simmer.
- Add the spiralized zucchini noodles to the skillet and toss to coat. Cook for 2-3 minutes, just until the zucchini is tender-crisp. Return the cooked chicken to the skillet.
- Stir in the grated Parmesan cheese until melted and the sauce slightly thickens. Serve immediately, garnished with fresh parsley if desired.
