Instructions
- In a measuring cup or small bowl, whisk together the low-sodium soy sauce, mirin, rice vinegar, honey, minced garlic, and grated ginger.
- Heat the avocado oil in a large skillet over medium-high heat. Add the chicken breast pieces in a single layer and sear undisturbed for 3 minutes until lightly browned.
- Stir the chicken, add the green onion pieces and sugar snap peas, and sauté for 3 minutes until the vegetables become tender-crisp and the chicken reaches an internal temperature of 165 degrees Fahrenheit.
- Pour the yakitori sauce into the hot skillet. Let the sauce boil and reduce vigorously for 2 to 3 minutes, tossing constantly until a glossy glaze coats every bite of chicken and vegetables.
- Divide the warm brown rice among four plates, spoon the glazed yakitori chicken and vegetables over the top, and sprinkle with toasted sesame seeds.
