Ingredients
- 1 cup rotisserie chicken (shredded)
- 0.5 cup smoky BBQ sauce
- 1 cup coleslaw mix (bagged)
- 0.25 cup ranch dressing
- 1 tablespoon white vinegar
- 0.25 teaspoon black pepper (freshly ground)
- 1 cup baked beans
- 0.25 teaspoon salt (kosher)
- 2 hamburger buns
Instructions
- Combine 1 cup shredded rotisserie chicken and 1/2 cup smoky BBQ sauce in a small saucepan. Heat over medium-low heat, stirring occasionally, until hot throughout, about 5 minutes.
- While the chicken heats, prepare the slaw. In a medium bowl, whisk together 1/4 cup prepared ranch dressing and 1 tablespoon white vinegar. Stir in 1 cup coleslaw mix, 1/4 teaspoon black pepper, and 1/4 teaspoon salt until evenly coated.
- Heat 1 cup baked beans according to package directions in the microwave.
- Serve the BBQ chicken mixture either piled directly onto 2 soft hamburger buns or alongside the beans and slaw.
Notes
This recipe works perfectly using pre-cooked chicken breast or turkey to keep the total prep time down. Make sure your coleslaw mix is fresh for optimal crunch.
