Ingredients
- 0.75 pound chicken breast (boneless, skinless, cut into 1-inch cubes)
- 1 tablespoon olive oil
- 0.5 yellow onion (chopped)
- 2 clove garlic (minced)
- 1 can tomato sauce (15 ounce)
- 0.5 cup chicken broth
- 1 teaspoon Italian seasoning (dried)
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 4 ounce penne pasta
- 0.5 cup Parmesan cheese (shredded, divided)
- 2 slice garlic bread (for serving)
Instructions
- Preheat oven to 375°F. Cook penne pasta according to package directions until al dente. Drain and set aside.
- While pasta cooks, heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Add chicken breast cubes and cook until lightly browned on all sides, about 5 minutes. Remove chicken and set aside.
- Add chopped yellow onion to the skillet and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
- Stir in tomato sauce, chicken broth, Italian seasoning, salt, and black pepper. Bring the sauce to a simmer, then return the cooked chicken to the skillet. Cook for 5 minutes, allowing flavors to meld.
- Stir in the cooked penne pasta and half of the shredded Parmesan cheese. Mix well to combine.
- Smooth the top of the pasta mixture and sprinkle with the remaining shredded Parmesan cheese.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly and the sauce is heated through. If desired, you can broil for the last 2-3 minutes for a golden-brown crust.
- Serve hot with slices of garlic bread.
Notes
You can prepare the sauce ahead of time and store it in the refrigerator. Assemble and bake just before dinner.
