Chicken with Parmesan Pasta Bake

  1. Preheat oven to 375°F. Cook penne pasta according to package directions until al dente. Drain and set aside.
  2. While pasta cooks, heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Add chicken breast cubes and cook until lightly browned on all sides, about 5 minutes. Remove chicken and set aside.
  3. Add chopped yellow onion to the skillet and cook until softened, about 3-4 minutes. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Stir in tomato sauce, chicken broth, Italian seasoning, salt, and black pepper. Bring the sauce to a simmer, then return the cooked chicken to the skillet. Cook for 5 minutes, allowing flavors to meld.
  5. Stir in the cooked penne pasta and half of the shredded Parmesan cheese. Mix well to combine.
  6. Smooth the top of the pasta mixture and sprinkle with the remaining shredded Parmesan cheese.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the sauce is heated through. If desired, you can broil for the last 2-3 minutes for a golden-brown crust.
  8. Serve hot with slices of garlic bread.

Notes

You can prepare the sauce ahead of time and store it in the refrigerator. Assemble and bake just before dinner.
