Chicken with Cherry Tomatoes and Spinach Pasta

Instructions

  1. Cook pasta according to package directions until al dente. Drain and set aside.
  2. While pasta cooks, heat 1 tablespoon olive oil in a large skillet or non-stick pan over medium-high heat. Add the 1 pound chicken breast pieces and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Season with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper.
  3. Add the 3 cloves minced garlic, 1 pint halved cherry tomatoes, and 1/2 teaspoon dried oregano to the skillet. Cook for 3-5 minutes, stirring occasionally, until tomatoes begin to soften and burst.
  4. Pour in the 1/2 cup chicken broth and bring to a simmer. Stir in the 5 ounces fresh spinach and cook until wilted, about 1-2 minutes.
  5. Add the cooked pasta to the skillet and toss everything together to combine. Adjust seasoning with remaining 1/2 teaspoon kosher salt if needed. Serve immediately, topped with optional 1/4 cup grated Parmesan cheese.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. A sprinkle of fresh basil before serving would be a nice addition.
