  1. In a medium saucepan, combine 1 cup white rice and 2 cups water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all water is absorbed. Remove from heat and let stand, covered, for 5 minutes.
  2. While the rice cooks, season chicken pieces with garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook for 5-7 minutes, turning occasionally, until lightly browned and cooked through. Remove chicken from skillet and set aside.
  4. Add broccoli florets and chicken broth to the same skillet. Bring to a simmer, cover, and cook for 5-7 minutes, or until broccoli is tender-crisp. Season with remaining 1/4 teaspoon salt and 1/4 teaspoon black pepper.
  5. Return cooked chicken to the skillet with the broccoli. Stir to combine and heat through for 1-2 minutes.
  6. Serve the chicken and broccoli mixture immediately over the prepared white rice.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. For even quicker prep, you can use pre-cooked rice packets or frozen pre-chopped chicken.
