Ingredients
- 2 flour tortillas (large (8-inch diameter))
- 0.5 cup chicken breast (cooked, shredded or diced)
- 0.5 cup Monterey Jack cheese (shredded)
- 0.25 cup mild salsa
- 2 tablespoon fresh cilantro (chopped)
Instructions
- Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking sheet.
- Place the two flour tortillas on the prepared baking sheet. Evenly spread 1/4 cup of cooked chicken breast over each tortilla.
- Sprinkle 1/4 cup of shredded Monterey Jack cheese over the chicken on each tortilla.
- Bake for 10-12 minutes, or until the cheese is melted and bubbly and the tortillas are lightly crisp around the edges.
- Carefully remove from the oven. Top each tortilla pizza with 2 tablespoons of mild salsa and, if desired, 1 tablespoon of chopped fresh cilantro.
- Serve immediately.
Notes
For extra crispiness, you can lightly toast the tortillas in a dry skillet for 1-2 minutes per side before adding toppings. Any kind of shredded cheese like cheddar or a Mexican blend will work here.
