Instructions

  1. Heat olive oil in a deep skillet over medium-high heat. Add sliced yellow onion and cook 3 minutes until softened. Add minced garlic, chipotle peppers in adobo, dried oregano, and 3/4 teaspoon salt, stirring for 1 minute.
  2. Pour in canned fire-roasted diced tomatoes and nestle chicken breast cutlets into the sauce. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 8 minutes until chicken reaches an internal temperature of 165°F.
  3. Transfer chicken to a cutting board, shred into bite-sized strips using two forks, and return to the skillet, tossing with the sauce for 2 minutes over low heat to absorb the liquid.
  4. Warm the canned black refried beans in a small saucepan or microwave-safe bowl with the remaining 1/4 teaspoon salt until heated through.
  5. Spread a generous layer of warm refried beans over each corn tostada shell. Spoon the warm chicken tinga over the beans, and top each with shredded green cabbage and crumbled cotija cheese.
