Chicken Teriyaki Fried Rice

  1. In a small bowl, whisk together 3 tablespoons low-sodium soy sauce, 2 tablespoons mirin, 1 tablespoon toasted sesame oil, 1 teaspoon grated fresh ginger, and 2 minced cloves garlic.
  2. Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat. Add 1 1/2 pounds diced chicken breast and cook until browned and cooked through, about 5 to 6 minutes. Transfer chicken to a clean plate.
  3. Add 3 beaten eggs to the hot pan and scramble for 1 minute until set, then slide onto the plate with the chicken.
  4. Pour the remaining 1 tablespoon vegetable oil into the pan. Add 4 cups cooked jasmine rice, 1 cup thawed edamame, and 1 cup shredded carrots. Stir-fry over high heat for 3 to 4 minutes until the rice is heated and lightly toasted.
  5. Return the cooked chicken and eggs to the skillet. Pour in the prepared sauce mixture and toss everything together for 2 minutes until evenly coated. Remove from heat and fold in 4 sliced green onions before portioning into lunch containers.

Notes
