Ingredients
- 1 pound chicken breast (boneless, skinless, thinly sliced)
- 1 tablespoon olive oil
- 1 tablespoon taco seasoning
- 0.5 cup water
- 12 flour tortillas (small)
- 1 cup shredded lettuce
- 0.5 cup shredded cheddar cheese
- 0.5 cup salsa
- 0.25 cup fresh cilantro (chopped)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the 1 pound thinly sliced chicken breast and cook for 5-7 minutes, stirring occasionally, until no longer pink.
- Stir in 1 tablespoon taco seasoning and 1/2 cup water. Bring to a simmer and cook for 3-5 minutes, or until the liquid has mostly evaporated and the chicken is coated in the seasoning.
- While the chicken cooks, warm the 12 small flour tortillas according to package directions (microwave or skillet).
- Serve the seasoned chicken in the warm tortillas with shredded lettuce, shredded cheddar cheese, salsa, and fresh cilantro, if desired.
Notes
To make this even quicker, you can use pre-cooked rotisserie chicken and simply shred it and warm it with the seasoning and water.
