  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the 1 pound thinly sliced chicken breast and cook for 5-7 minutes, stirring occasionally, until no longer pink.
  2. Stir in 1 tablespoon taco seasoning and 1/2 cup water. Bring to a simmer and cook for 3-5 minutes, or until the liquid has mostly evaporated and the chicken is coated in the seasoning.
  3. While the chicken cooks, warm the 12 small flour tortillas according to package directions (microwave or skillet).
  4. Serve the seasoned chicken in the warm tortillas with shredded lettuce, shredded cheddar cheese, salsa, and fresh cilantro, if desired.

Notes

To make this even quicker, you can use pre-cooked rotisserie chicken and simply shred it and warm it with the seasoning and water.
