Ingredients
- 3.5 pound chicken thighs (boneless, skinless, cut into 1 1/2-inch pieces)
- 2 tablespoon olive oil
- 2 yellow onions (medium, chopped)
- 4 carrots (peeled and sliced)
- 4 celery stalks (sliced)
- 6 clove garlic (minced)
- 8 cup low-sodium chicken broth
- 1.5 pound red potatoes (diced)
- 2 bay leaves
- 1 tablespoon dried thyme
- 0.5 teaspoon kosher salt
- 1 cup dairy-free milk (unsweetened, plain)
- 0.25 cup cornstarch
- 2 tablespoon fresh parsley (chopped)
- 1 crusty bread (dairy-free)
Instructions
- Heat 2 tablespoons olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add 3 1/2 pounds chicken thighs and brown on all sides for 5-7 minutes. Remove chicken and set aside.
- To the same pot, add 2 chopped yellow onions, 4 sliced carrots, and 4 sliced celery stalks. Sauté for 5-7 minutes until softened.
- Stir in 6 minced garlic cloves, 1 tablespoon dried thyme, and 1/2 teaspoon kosher salt. Cook for 1 minute until fragrant.
- Pour in 8 cups low-sodium chicken broth, scraping any browned bits from the bottom of the pot. Return the chicken thighs to the pot. Add 1 1/2 pounds diced red potatoes and 2 bay leaves.
- Bring the stew to a simmer, then reduce heat to low, cover, and cook for 45 minutes, or until vegetables are tender and chicken is cooked through.
- In a small bowl, whisk together 1 cup dairy-free milk alternative and 1/4 cup cornstarch until smooth. Slowly whisk this mixture into the simmering stew. Cook, stirring constantly, for 2-3 minutes until the stew thickens. Remove bay leaves before serving.
- Serve the hearty chicken stew warm with crusty dairy-free bread. Garnish with fresh parsley if desired. This stew reheats beautifully and makes great leftovers.
Notes
For a richer flavor, you can briefly sear the chicken pieces in batches until lightly golden before adding the vegetables. Skim any fat from the surface of the stew before serving for a lighter finish.
