Chicken-Spinach Skillet with Garlic Noodles

  1. Cook the dried egg noodles according to package directions. Drain and set aside.
  2. Cut the chicken breast into 1-inch pieces. Season the chicken with 1/8 teaspoon of the salt and 1/8 teaspoon of the black pepper.
  3. Heat the olive oil in a skillet over medium heat. Add the chicken and cook for 5 to 7 minutes, until browned and cooked through. Remove the chicken from the skillet and set aside.
  4. Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Stir in the cream cheese and dried Italian seasoning until the cream cheese is melted and the sauce is smooth.
  6. Add the fresh spinach to the skillet and cook until wilted, about 2 to 3 minutes.
  7. Return the cooked chicken to the skillet. Stir in the cooked dried egg noodles until well coated with the sauce and warmed through. Stir in the remaining salt and pepper to taste.
  8. Serve immediately, topped with grated Parmesan cheese if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. A sprinkle of fresh parsley also makes a nice garnish.
