Ingredients
- 1 celery (chopped)
- 1 carrot (chopped)
- 1 onion (chopped)
- 1 cup frozen peas
- 5.5 cup chicken broth (low-sodium)
- 1 cup cooked chicken (cubed, or canned (drained))
- 0.5 cup uncooked rice
Instructions
- Combine celery, carrots, onions, frozen peas, and chicken broth in a pot.
- Bring to a boil.
- Add cooked chicken and reduce heat.
- Add uncooked rice.
- Simmer on low until rice is tender and flavors are mixed.
- Chicken should reach a final internal cook temperature of 165°F as measured with a food thermometer before serving.
Notes
For the grain, you can use 1/2 cup uncooked macaroni or small noodles instead of rice, if preferred.
