Chicken Shawarma Bowls

  1. In a bowl, combine 4 ounces thinly sliced chicken breast with 1 tablespoon olive oil, 1 teaspoon ground cumin, 1/2 teaspoon ground coriander, 1/2 teaspoon smoked paprika, 1/4 teaspoon garlic powder, 1/4 teaspoon turmeric powder, 1/8 teaspoon cayenne pepper (if using), 1/2 teaspoon kosher salt, 1/4 teaspoon black pepper, and 1 tablespoon fresh lemon juice. Toss to coat and let marinate for at least 10 minutes.
  2. While chicken marinates, dice 1/4 each cucumber and 1/4 each Roma tomato to make a quick salad.
  3. Heat a large skillet over medium-high heat. Add the marinated chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and slightly browned.
  4. Warm 1 pita bread according to package directions (microwave or pan-fry lightly).
  5. Serve the cooked chicken in a bowl or on the warm pita bread, accompanied by the cucumber and Roma tomato salad and 2 tablespoons tzatziki sauce. Garnish with 1 tablespoon chopped fresh parsley, if desired.

Notes

Marinating the chicken even for a short time will enhance the flavor.
