Chicken Salad with Ramen Noodles

Use up a large head of cabbage from the farmers' market or grocery store with this recipe. The bell pepper and green onions bring a variety of flavors while the chicken and peanuts add protein.

Ingredients
- 3 ounce Ramen noodles (any flavor)
- 1 cup bell pepper
- 0.25 cup scallions (minced)
- 0.5 cup peanuts (dry roasted, unsalted)
- 2 chicken breasts (cooked, chilled and cut into cubes)
- 8 cup cabbage (shredded or cabbage salad mix)
- 2 teaspoon sugar
- 2 tablespoon olive oil (or cooking oil of choice)
- 0.5 cup vinegar (rice or white wine)
- 1 teaspoon Ramen noodle flavor packet
Instructions
- Break up Ramen noodles and set aside.
- In a large bowl, add bell pepper, scallions, peanuts, and other vegetables if you like.
- Add chicken breast and cabbage.
- In a small bowl make dressing with sugar, vinegar, olive oil, and Ramen noodle flavor packet, then stir well.
- Pour the dressing over the salad and combine.
- Sprinkle Ramen noodles on top.
- Serve cold.
