Chicken-Ricotta Penne

  1. Bring a large pot of salted water to a boil. Add penne pasta and cook according to package directions for 10 minutes until al dente; reserve 1/2 cup pasta water, then drain.
  2. While pasta cooks, season chicken breast pieces with salt, black pepper, and dried Italian seasoning.
  3. Heat canola oil in a large deep skillet over medium-high heat. Add seasoned chicken and cook for 6 to 7 minutes, stirring occasionally, until deeply browned and the internal temperature reaches 165 degrees F.
  4. Reduce heat to medium, add minced garlic to the skillet with the chicken, and sauté for 1 minute until fragrant.
  5. Pour in marinara sauce and stir in whole milk ricotta cheese until completely smooth and creamy. Bring to a gentle simmer for 2 minutes.
  6. Stir in fresh baby spinach and the cooked penne pasta, tossing for 2 minutes until spinach is wilted and the pasta is thoroughly coated with sauce, adding a splash of reserved pasta water if needed.
  7. Scatter shredded mozzarella cheese evenly over the top, cover the skillet with a lid for 2 minutes until the cheese is completely melted, and serve hot.

Notes

Extra servings reheat exceptionally well in the microwave; stir in a tablespoon of water or milk to loosen the sauce.
