Ingredients
- 6 ounce chicken breast (boneless, skinless, cut into 1-inch cubes)
- 2 tablespoon Piri Piri sauce
- 1 red bell pepper (small, cut into 1-inch pieces)
- 0.5 red onion (small, cut into 1-inch pieces)
- 0.5 cup quick-cooking couscous
- 1 cup chicken broth
- 2 tablespoon fresh parsley (chopped)
- 1 tablespoon fresh lemon juice
- 2 tablespoon olive oil
- 4 cup mixed greens
- 1 tablespoon red wine vinegar
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- In a medium bowl, combine the chicken breast cubes with the Piri Piri sauce and 1/2 tablespoon of olive oil. Toss to coat and set aside for 5 minutes.
- Thread the marinated chicken, red bell pepper, and red onion pieces onto two skewers.
- Heat 1/2 tablespoon of olive oil in a large skillet over medium-high heat. Add the skewers and cook for 10-12 minutes, turning occasionally, until chicken is cooked through and vegetables are tender-crisp.
- While skewers cook, bring the chicken broth to a boil in a small saucepan. Stir in the quick-cooking couscous, cover, remove from heat, and let stand for 5 minutes. Fluff with a fork, then stir in the fresh parsley, fresh lemon juice, 1/8 teaspoon salt, and 1/8 teaspoon black pepper.
- In a small bowl, whisk together the remaining 1 tablespoon of olive oil and red wine vinegar. Toss the mixed greens with the dressing and the remaining 1/8 teaspoon salt and 1/8 teaspoon black pepper.
- Serve the Piri Piri chicken skewers with the lemon herb couscous and a side of green salad.
Notes
If you don't have skewers, you can cook the chicken and vegetables in the skillet as a stir-fry.
