Instructions

  1. In a medium bowl, combine the chicken breast cubes with the Piri Piri sauce and 1/2 tablespoon of olive oil. Toss to coat and set aside for 5 minutes.
  2. Thread the marinated chicken, red bell pepper, and red onion pieces onto two skewers.
  3. Heat 1/2 tablespoon of olive oil in a large skillet over medium-high heat. Add the skewers and cook for 10-12 minutes, turning occasionally, until chicken is cooked through and vegetables are tender-crisp.
  4. While skewers cook, bring the chicken broth to a boil in a small saucepan. Stir in the quick-cooking couscous, cover, remove from heat, and let stand for 5 minutes. Fluff with a fork, then stir in the fresh parsley, fresh lemon juice, 1/8 teaspoon salt, and 1/8 teaspoon black pepper.
  5. In a small bowl, whisk together the remaining 1 tablespoon of olive oil and red wine vinegar. Toss the mixed greens with the dressing and the remaining 1/8 teaspoon salt and 1/8 teaspoon black pepper.
  6. Serve the Piri Piri chicken skewers with the lemon herb couscous and a side of green salad.

Notes

If you don't have skewers, you can cook the chicken and vegetables in the skillet as a stir-fry.
