Ingredients
- 1.5 pound boneless skinless chicken breast (halved horizontally to create 4 thinner cutlets)
- 0.5 cup all-purpose flour
- 2 eggs (large, beaten)
- 1 cup panko breadcrumbs
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 4 tablespoon olive oil (for salad dressing)
- 1.5 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 0.5 cup grated Parmesan cheese
- 8 ounce spaghetti (uncooked)
- 4 cup mixed greens
- 1 tablespoon red wine vinegar
Instructions
- Preheat oven to 400°F (200°C). Prepare a baking dish by lightly greasing it.
- Set up a dredging station: Place 1/2 cup all-purpose flour in a shallow dish, 2 large eggs in another shallow dish, and 1 cup panko breadcrumbs seasoned with 1/2 teaspoon salt and 1/4 teaspoon black pepper in a third dish.
- Dredge each of the 1 1/2 pounds boneless skinless chicken breast cutlets first in flour, shaking off excess, then in egg, then in breadcrumbs, pressing to adhere.
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Sear the breaded chicken for 2-3 minutes per side until golden brown (it won't be cooked through).
- Pour 1 1/2 cups marinara sauce into the bottom of the prepared baking dish. Place the seared chicken cutlets over the sauce. Top each piece of chicken with 1 cup shredded mozzarella cheese and 1/2 cup grated Parmesan cheese.
- Bake for 20-25 minutes, or until chicken is cooked through and cheese is melted and bubbly. While the chicken bakes, cook 8 ounces spaghetti according to package directions.
- In a small bowl, whisk together 2 tablespoons olive oil and 1 tablespoon red wine vinegar. Toss with 4 cups mixed greens to make a simple salad.
- Serve the Chicken Parmesan Bake immediately with spaghetti and a green salad.
Notes
You can add a slice of garlic bread to complete this classic meal. Leftovers can be reheated gently in the oven or microwave.
