Ingredients
- 1 chicken breast (boneless, skinless)
- 0.25 cup all-purpose flour
- 1 egg (beaten)
- 0.5 cup panko breadcrumbs
- 0.25 teaspoon salt
- 0.125 teaspoon black pepper
- 1 tablespoon olive oil (for pan-frying)
- 0.5 cup marinara sauce
- 0.25 cup mozzarella cheese (shredded)
- 2 ounce linguine (dry)
- 1 cup green beans (fresh or frozen)
Instructions
- Preheat oven to 400°F (200°C). Pat the chicken breast dry.
- Set up a breading station: one shallow dish with 1/4 cup all-purpose flour, one with 1 beaten egg, and one with 1/2 cup panko breadcrumbs mixed with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
- Dredge the chicken breast first in flour, shaking off excess, then dip in egg, and finally coat thoroughly in panko breadcrumbs.
- Heat 1 tablespoon olive oil in an oven-safe skillet over medium-high heat. Pan-fry the breaded chicken for 3-4 minutes per side, until golden brown. It doesn't need to be fully cooked through at this stage.
- Spoon 1/2 cup marinara sauce over the chicken in the skillet, then sprinkle with 1/4 cup shredded mozzarella cheese.
- Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- While the chicken bakes, cook 2 ounces dry linguine according to package directions. Steam 1 cup green beans until tender-crisp, about 3-5 minutes.
- Serve the Chicken Parmesan immediately with the linguine and steamed green beans.
Notes
To ensure even cooking, you can pound the chicken breast to an even thickness before breading.
