  1. Preheat oven to 400°F. Slice each chicken breast horizontally to create 4 thinner cutlets. Pat them dry with paper towels.
  2. In a shallow dish, combine the breadcrumbs, Parmesan cheese, dried oregano, garlic powder, 1/2 teaspoon salt, and black pepper. In another shallow dish, whisk the eggs.
  3. Dip each chicken cutlet into the beaten egg, allowing excess to drip off, then dredge in the breadcrumb mixture, pressing to coat thoroughly.
  4. Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Sear chicken cutlets for 2-3 minutes per side, until golden brown. You may need to do this in batches, adding more olive oil if needed. Transfer seared chicken to a plate.
  5. In the same skillet, add the crushed tomatoes and red pepper flakes (if using). Bring to a simmer over medium heat for 2-3 minutes.
  6. Return chicken cutlets to the skillet, nestling them into the sauce. Top each with shredded mozzarella cheese.
  7. Bake in the preheated oven for 8-10 minutes, or until chicken is cooked through and cheese is melted and bubbly.
  8. While chicken bakes, cook linguine according to package directions in salted water. Drain well, then toss with butter.
  9. In a separate bowl, toss the mixed greens with Italian dressing.
  10. Serve the Chicken Parmesan over buttered linguine with the dressed mixed greens on the side.

Notes

Ensure chicken breasts are thinly sliced to ensure quick cooking. You can use pre-packaged pre-sliced chicken cutlets for even faster prep.
