Ingredients
- 1.5 pound chicken breast (boneless, skinless)
- 1 cup plain breadcrumbs
- 0.5 cup Parmesan cheese (grated)
- 1 teaspoon dried oregano
- 0.5 teaspoon garlic powder
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 eggs (large, beaten)
- 2 tablespoon olive oil
- 1 can crushed tomatoes
- 0.25 teaspoon red pepper flakes
- 1 cup mozzarella cheese (shredded)
- 8 ounce linguine
- 2 tablespoon butter
- 1 package mixed greens
- 0.25 cup Italian dressing
Instructions
- Preheat oven to 400°F. Slice each chicken breast horizontally to create 4 thinner cutlets. Pat them dry with paper towels.
- In a shallow dish, combine the breadcrumbs, Parmesan cheese, dried oregano, garlic powder, 1/2 teaspoon salt, and black pepper. In another shallow dish, whisk the eggs.
- Dip each chicken cutlet into the beaten egg, allowing excess to drip off, then dredge in the breadcrumb mixture, pressing to coat thoroughly.
- Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Sear chicken cutlets for 2-3 minutes per side, until golden brown. You may need to do this in batches, adding more olive oil if needed. Transfer seared chicken to a plate.
- In the same skillet, add the crushed tomatoes and red pepper flakes (if using). Bring to a simmer over medium heat for 2-3 minutes.
- Return chicken cutlets to the skillet, nestling them into the sauce. Top each with shredded mozzarella cheese.
- Bake in the preheated oven for 8-10 minutes, or until chicken is cooked through and cheese is melted and bubbly.
- While chicken bakes, cook linguine according to package directions in salted water. Drain well, then toss with butter.
- In a separate bowl, toss the mixed greens with Italian dressing.
- Serve the Chicken Parmesan over buttered linguine with the dressed mixed greens on the side.
Notes
Ensure chicken breasts are thinly sliced to ensure quick cooking. You can use pre-packaged pre-sliced chicken cutlets for even faster prep.
