Ingredients
- 2.5 pound chicken breast (boneless, skinless)
- 1 cup all-purpose flour
- 2 eggs (large, beaten)
- 1 cup panko breadcrumbs
- 0.5 cup Parmesan cheese (grated)
- 0.75 teaspoon salt
- 0.5 teaspoon black pepper
- 4 fluid ounce olive oil
- 24 ounce marinara sauce
- 1 cup mozzarella cheese (shredded)
- 1 pound spaghetti
- 6 cup mixed greens
- 3 tablespoon balsamic vinaigrette
- 1 garlic bread
Instructions
- Preheat your oven to 400 degrees Fahrenheit. Prepare your dredging station: In one shallow dish, add the all-purpose flour. In a second dish, whisk the large eggs. In a third dish, combine the panko breadcrumbs, 1/4 cup grated Parmesan cheese, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
- Pound the chicken breasts to an even 1/2-inch thickness. Season each chicken breast with the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Dredge each chicken breast: first in flour, then in egg, and finally in the panko mixture, pressing to coat well.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Carefully add the breaded chicken breasts and sear for 3-4 minutes per side, until golden brown.
- Pour the marinara sauce over the chicken, then sprinkle with the shredded mozzarella cheese and remaining 1/4 cup grated Parmesan cheese.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is bubbly and golden. While the chicken bakes, cook the spaghetti according to package directions.
- Prepare the green salad by tossing mixed greens with balsamic vinaigrette. Bake the garlic bread according to package directions.
- Serve the Chicken Parmesan immediately over spaghetti, with a side of green salad and garlic bread.
Notes
Leftovers can be stored in an airtight container for up to 3 days. Reheat gently in the oven for best results.
