Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Prepare your dredging station: In one shallow dish, add the all-purpose flour. In a second dish, whisk the large eggs. In a third dish, combine the panko breadcrumbs, 1/4 cup grated Parmesan cheese, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
  2. Pound the chicken breasts to an even 1/2-inch thickness. Season each chicken breast with the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  3. Dredge each chicken breast: first in flour, then in egg, and finally in the panko mixture, pressing to coat well.
  4. Heat the olive oil in a large oven-safe skillet over medium-high heat. Carefully add the breaded chicken breasts and sear for 3-4 minutes per side, until golden brown.
  5. Pour the marinara sauce over the chicken, then sprinkle with the shredded mozzarella cheese and remaining 1/4 cup grated Parmesan cheese.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is bubbly and golden. While the chicken bakes, cook the spaghetti according to package directions.
  7. Prepare the green salad by tossing mixed greens with balsamic vinaigrette. Bake the garlic bread according to package directions.
  8. Serve the Chicken Parmesan immediately over spaghetti, with a side of green salad and garlic bread.
