Ingredients
- 1.5 pound chicken breast (boneless, skinless, sliced into strips)
- 1 tablespoon avocado oil
- 8 ounce white mushrooms (sliced)
- 1 cup low-sodium chicken broth
- 1 teaspoon dried thyme
- 0.5 teaspoon dried parsley
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper (ground)
- 12 ounce broccoli florets (cut into bite-sized pieces)
Instructions
- Season the chicken breast strips with dried thyme, dried parsley, salt, and black pepper.
- Heat avocado oil in a large skillet over medium-high heat. Add chicken breast strips and cook for 5 to 6 minutes until lightly browned on the outside.
- Add the sliced white mushrooms and low-sodium chicken broth to the skillet. Reduce heat to medium, cover, and simmer for 6 minutes until mushrooms are tender and chicken reaches an internal temperature of 165 degrees.
- Place broccoli florets in a steamer basket over simmering water for 4 to 5 minutes until vibrant green and tender-crisp, then serve alongside the chicken and mushrooms.
