- 1.5 pound chicken thighs (boneless, skinless, cut into 1-inch pieces)
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 0.5 teaspoon garlic powder
- 0.75 teaspoon salt
- 0.5 teaspoon black pepper
- 8 ounce cremini mushrooms (sliced)
- 4 ounce cream cheese (softened)
- 0.5 cup chicken broth
- 5 ounce fresh spinach
Instructions
- Pat chicken thighs dry and season with 1/2 teaspoon salt, 1/4 teaspoon black pepper, dried oregano, and garlic powder.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken and cook for 5-7 minutes, turning occasionally, until browned on all sides. Remove chicken from skillet and set aside.
- Add sliced cremini mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until softened and lightly browned.
- Reduce heat to medium. Add softened cream cheese and chicken broth to the skillet, stirring until cream cheese is melted and a smooth sauce forms.
- Stir in fresh spinach and cook until wilted, about 2-3 minutes. Return chicken to the skillet, stirring to coat.
- Season with remaining 1/4 teaspoon salt and 1/4 teaspoon black pepper, and serve hot.
Notes
