  1. Pat chicken thighs dry and season with 1/2 teaspoon salt, 1/4 teaspoon black pepper, dried oregano, and garlic powder.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken and cook for 5-7 minutes, turning occasionally, until browned on all sides. Remove chicken from skillet and set aside.
  3. Add sliced cremini mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until softened and lightly browned.
  4. Reduce heat to medium. Add softened cream cheese and chicken broth to the skillet, stirring until cream cheese is melted and a smooth sauce forms.
  5. Stir in fresh spinach and cook until wilted, about 2-3 minutes. Return chicken to the skillet, stirring to coat.
  6. Season with remaining 1/4 teaspoon salt and 1/4 teaspoon black pepper, and serve hot.

Notes

This dish is wonderful on its own or can be served with a side of cauliflower mash for an extra rich and hearty meal.
