  1. Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium heat. Add 0.5 chopped yellow onion and cook until softened, about 3-4 minutes.
  2. Add 2 minced garlic cloves and cook for 1 minute until fragrant.
  3. Add 1 pound chicken tenders (cut into 1-inch pieces), 4 cups chicken broth, and 2 cups water to the pot. Bring to a simmer.
  4. Once simmering, stir in 1/2 cup macaroni pasta. Cook for 7-9 minutes, or until the pasta is tender and the chicken is cooked through.
  5. Stir in 2 cups fresh spinach and cook until just wilted, about 1-2 minutes. Taste and season with 1 teaspoon kosher salt and 1/2 teaspoon black pepper, adding more if needed.
  6. Ladle into bowls and serve hot, garnished with optional 2 tablespoons chopped fresh parsley.

Notes

Feel free to add other quick-cooking vegetables like frozen peas or carrots during the last few minutes of cooking.
