Ingredients
- 1 tablespoon olive oil
- 1 pound chicken tenders (cut into 1-inch pieces)
- 0.5 yellow onion (chopped)
- 2 clove garlic (minced)
- 4 cup chicken broth
- 2 cup water
- 0.5 cup macaroni pasta
- 2 cup fresh spinach
- 2 tablespoon fresh parsley (chopped)
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper (freshly ground)
Instructions
- Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium heat. Add 0.5 chopped yellow onion and cook until softened, about 3-4 minutes.
- Add 2 minced garlic cloves and cook for 1 minute until fragrant.
- Add 1 pound chicken tenders (cut into 1-inch pieces), 4 cups chicken broth, and 2 cups water to the pot. Bring to a simmer.
- Once simmering, stir in 1/2 cup macaroni pasta. Cook for 7-9 minutes, or until the pasta is tender and the chicken is cooked through.
- Stir in 2 cups fresh spinach and cook until just wilted, about 1-2 minutes. Taste and season with 1 teaspoon kosher salt and 1/2 teaspoon black pepper, adding more if needed.
- Ladle into bowls and serve hot, garnished with optional 2 tablespoons chopped fresh parsley.
Notes
Feel free to add other quick-cooking vegetables like frozen peas or carrots during the last few minutes of cooking.
