- 6 ounce ground chicken
- 0.25 yellow onion (finely diced)
- 1 clove garlic (minced)
- 1 tablespoon soy sauce

- 4 lettuce leaves (large, such as butter or Bibb)
- 0.25 cup shredded carrot
- 0.25 cup sliced cucumber
- 1 tablespoon fresh lime juice
- 1 tablespoon water
- 0.5 teaspoon fish sauce
- 0.5 teaspoon Sriracha
Instructions
- Heat 1 tablespoon olive oil in a medium skillet over medium-high heat. Add 6 ounces ground chicken, 1/4 finely diced yellow onion, and 1 clove minced garlic. Cook, breaking up the chicken with a spoon, until no longer pink and the onion is softened, about 5-7 minutes.
- Stir in 1 tablespoon soy sauce, 1 teaspoon rice vinegar, and 1 teaspoon brown sugar. Cook for 1-2 minutes until the sauce slightly thickens and coats the chicken.
- While the chicken cooks, prepare the dressing: In a small bowl, whisk together 1 tablespoon fresh lime juice, 1 tablespoon water, and 1/2 teaspoon fish sauce. Add 1/2 teaspoon Sriracha if desired.
- Arrange the lettuce leaves, shredded carrot, and sliced cucumber on a plate. Spoon the chicken mixture into the lettuce cups. Drizzle with the nuoc cham-style dressing and serve immediately.
Notes
For a bit of crunch, add some chopped peanuts or cashews, if desired.
