  1. Prepare the chicken: In a medium bowl, toss thinly sliced chicken breast with 1 tablespoon olive oil, dried oregano, dried thyme, garlic powder, paprika, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Mix well to coat.
  2. Prepare the tzatziki: In a small bowl, combine plain Greek yogurt, grated and squeezed dry cucumber, minced garlic, 1 tablespoon fresh lemon juice, and chopped fresh dill. Stir well and season with a pinch of salt and pepper. Cover and refrigerate until serving.
  3. Heat remaining 1 tablespoon olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and slightly browned. Break up any larger pieces.
  4. While chicken cooks, warm the pita breads: You can heat them in a dry skillet for 30 seconds per side, microwave for 15-20 seconds, or toast lightly. Chop romaine lettuce, Roma tomato, and thinly slice red onion for assembly.
  5. To assemble bowls: Divide chopped romaine lettuce between two bowls. Top with cooked chicken, chopped Roma tomato, and thinly sliced red onion. Drizzle generously with tzatziki.
  6. Serve immediately with warm pita bread on the side.

Notes

For best flavor, marinate the chicken for at least 30 minutes before cooking. Adjust the amount of garlic in the tzatziki to your preference.
