- 1 pound chicken breast (boneless, skinless, cut into 1/2-inch cubes)

- 2 cup white rice (uncooked)
- 1 can black beans (rinsed and drained)
- 1 cup frozen corn
- 0.5 cup salsa
- 0.5 cup shredded cheddar cheese
- 0.25 cup fresh cilantro (chopped)
Instructions
- Cook the white rice according to package directions, typically by combining 2 cups white rice with 4 cups water and a pinch of salt in a saucepan, bringing to a boil, then reducing heat to low, covering, and simmering for 15-20 minutes until water is absorbed. Fluff with a fork.
- While rice cooks, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the cubed chicken breast and season with 1 teaspoon chili powder, 1/2 teaspoon ground cumin, 1/4 teaspoon garlic powder, salt, and black pepper. Cook, stirring occasionally, until chicken is browned and cooked through, about 5-7 minutes.
- Stir in the rinsed and drained black beans and frozen corn into the skillet with the chicken. Cook for another 3-5 minutes, until heated through.
- Divide the cooked white rice among serving bowls. Top each with the chicken and bean mixture. Serve with salsa, and if desired, shredded cheddar cheese and chopped fresh cilantro.
