  1. Cook the white rice according to package directions, typically by combining 2 cups white rice with 4 cups water and a pinch of salt in a saucepan, bringing to a boil, then reducing heat to low, covering, and simmering for 15-20 minutes until water is absorbed. Fluff with a fork.
  2. While rice cooks, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the cubed chicken breast and season with 1 teaspoon chili powder, 1/2 teaspoon ground cumin, 1/4 teaspoon garlic powder, salt, and black pepper. Cook, stirring occasionally, until chicken is browned and cooked through, about 5-7 minutes.
  3. Stir in the rinsed and drained black beans and frozen corn into the skillet with the chicken. Cook for another 3-5 minutes, until heated through.
  4. Divide the cooked white rice among serving bowls. Top each with the chicken and bean mixture. Serve with salsa, and if desired, shredded cheddar cheese and chopped fresh cilantro.

Notes

Leftovers can be stored in airtight containers for up to 3 days. For younger children, you can omit the chili powder or use less.
