Chicken Fajita Skillet with Peppers and Onions

  1. Toss sliced chicken breast with 1 tablespoon olive oil and fajita seasoning. Season with salt and black pepper.
  2. Heat the remaining 1 tablespoon olive oil in a large skillet or cast-iron pan over medium-high heat. Add the seasoned chicken and cook for 3-4 minutes per side, or until lightly browned and cooked through. Remove chicken from the skillet and set aside.
  3. Add sliced red bell peppers, green bell peppers, and yellow onion to the same skillet. Sauté for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp. Return chicken to the skillet and toss to combine.
  4. While fajitas cook, prepare quick guacamole by mashing avocados in a small bowl. Add a pinch of salt if desired. Warm the tortillas according to package directions (microwave, oven, or skillet).
  5. Serve the chicken fajita mixture with warm tortillas, prepared salsa, and fresh guacamole.

Notes

To keep the veggies tender-crisp, avoid overcrowding the skillet. Work in batches if necessary.
