- 1 red bell pepper (sliced)

- 4 flour tortillas (medium)
- 0.5 cup salsa (for serving)

- 1 lime (cut into wedges, for serving)
Instructions
- Pat chicken breast strips dry with paper towels. Season chicken with 1 tablespoon fajita seasoning blend, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the seasoned chicken strips and cook for 4-5 minutes, or until browned and cooked through. Remove chicken from the skillet and set aside.
- Add sliced yellow onion, red bell pepper, and green bell pepper to the same skillet. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp. Add the remaining 1 tablespoon fajita seasoning blend to the vegetables and stir to combine.
- Return the cooked chicken to the skillet with the vegetables. Toss to combine and heat through for 1-2 minutes.
- While the chicken and vegetables are cooking, warm the flour tortillas according to package directions (microwave, oven, or skillet).
- Serve the chicken fajita mixture immediately in warm flour tortillas. Top with 1/2 cup salsa, and garnish with chopped fresh cilantro and lime wedges.
Notes
For extra flavor, you can marinate the chicken in half of the fajita seasoning with a splash of lime juice for 15-20 minutes before cooking.
