Chicken Fajita Skillet

  1. Pat chicken breast strips dry with paper towels. Season chicken with 1 tablespoon fajita seasoning blend, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the seasoned chicken strips and cook for 4-5 minutes, or until browned and cooked through. Remove chicken from the skillet and set aside.
  3. Add sliced yellow onion, red bell pepper, and green bell pepper to the same skillet. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp. Add the remaining 1 tablespoon fajita seasoning blend to the vegetables and stir to combine.
  4. Return the cooked chicken to the skillet with the vegetables. Toss to combine and heat through for 1-2 minutes.
  5. While the chicken and vegetables are cooking, warm the flour tortillas according to package directions (microwave, oven, or skillet).
  6. Serve the chicken fajita mixture immediately in warm flour tortillas. Top with 1/2 cup salsa, and garnish with chopped fresh cilantro and lime wedges.

Notes

For extra flavor, you can marinate the chicken in half of the fajita seasoning with a splash of lime juice for 15-20 minutes before cooking.
