  1. Cook white rice according to package directions.
  2. While rice cooks, prepare the chicken: In a small bowl, combine chili powder, ground cumin, smoked paprika, garlic powder, cayenne pepper (if using), 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add thinly sliced chicken breast and cook for 5-7 minutes, until no longer pink. Remove chicken from skillet and set aside.
  4. Add sliced bell peppers and yellow onion to the same skillet. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp. Add the cooked chicken back to the skillet and sprinkle with the spice mixture. Toss to coat evenly and cook for 1-2 minutes more, until fragrant.
  5. Once white rice is cooked, stir in chopped fresh cilantro and fresh lime juice.
  6. To assemble bowls, divide cilantro-lime rice among four serving bowls. Top with chicken and bell pepper mixture, black beans, and serve with tortilla chips on the side.

Notes

Adjust the cayenne pepper to control the spice level. You can add toppings like sour cream, avocado, or salsa for extra flavor.
