Chicken Fajita Bowls

  1. Cook the microwaveable brown rice according to package directions while you prepare the fajita ingredients.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the thinly sliced chicken breast and cook for 3-4 minutes, until lightly browned and almost cooked through. Remove chicken from the skillet and set aside.
  3. Add the sliced bell pepper and yellow onion to the same skillet. Sauté for 3-4 minutes, until softened and slightly charred.
  4. Return the chicken breast to the skillet. Sprinkle with fajita seasoning and cook for another 2-3 minutes, stirring occasionally, until the chicken is fully cooked and coated in seasoning.
  5. Transfer the cooked brown rice to a bowl. Top with the chicken and bell pepper mixture. Garnish with salsa, tortilla chips, a lime wedge, and fresh cilantro, if desired.
