Ingredients
- 0.5 chicken breast (boneless, skinless, thinly sliced)
- 0.5 tablespoon olive oil
- 0.5 bell pepper (medium, thinly sliced)
- 0.25 yellow onion (small, thinly sliced)
- 1 tablespoon fajita seasoning
- 1 cup brown rice (microwaveable)
- 2 tablespoon salsa
- 1 ounce tortilla chips
- 1 lime (wedge)
- 1 tablespoon fresh cilantro (chopped)
Instructions
- Cook the microwaveable brown rice according to package directions while you prepare the fajita ingredients.
- Heat the olive oil in a large skillet over medium-high heat. Add the thinly sliced chicken breast and cook for 3-4 minutes, until lightly browned and almost cooked through. Remove chicken from the skillet and set aside.
- Add the sliced bell pepper and yellow onion to the same skillet. Sauté for 3-4 minutes, until softened and slightly charred.
- Return the chicken breast to the skillet. Sprinkle with fajita seasoning and cook for another 2-3 minutes, stirring occasionally, until the chicken is fully cooked and coated in seasoning.
- Transfer the cooked brown rice to a bowl. Top with the chicken and bell pepper mixture. Garnish with salsa, tortilla chips, a lime wedge, and fresh cilantro, if desired.
