  1. Heat 1 tablespoon olive oil in a large skillet or non-stick pan over medium-high heat. Add the sliced yellow onion and bell pepper. Sauté for 5-7 minutes, until tender-crisp.
  2. While the vegetables cook, combine 1 teaspoon chili powder, 1/2 teaspoon ground cumin, and 1/4 teaspoon garlic powder in a small bowl. Stir in 1/2 cup water to create a sauce.
  3. Add the shredded rotisserie chicken to the skillet with the sautéed vegetables. Pour the sauce mixture over the chicken and vegetables. Stir to combine and cook for 2-3 minutes, until the chicken is heated through and coated with the sauce. Season with salt and black pepper to taste.
  4. Prepare the microwaveable white rice according to package directions, which typically takes 90 seconds to 2 minutes. Warm the rinsed and drained black beans in a small saucepan or microwave for 1-2 minutes.
  5. Divide the rice among three bowls. Top each with the chicken and vegetable mixture, warm black beans, and a dollop of prepared salsa.
