Instructions
- Heat 1 tablespoon olive oil in a large skillet or non-stick pan over medium-high heat. Add the sliced yellow onion and bell pepper. Sauté for 5-7 minutes, until tender-crisp.
- While the vegetables cook, combine 1 teaspoon chili powder, 1/2 teaspoon ground cumin, and 1/4 teaspoon garlic powder in a small bowl. Stir in 1/2 cup water to create a sauce.
- Add the shredded rotisserie chicken to the skillet with the sautéed vegetables. Pour the sauce mixture over the chicken and vegetables. Stir to combine and cook for 2-3 minutes, until the chicken is heated through and coated with the sauce. Season with salt and black pepper to taste.
- Prepare the microwaveable white rice according to package directions, which typically takes 90 seconds to 2 minutes. Warm the rinsed and drained black beans in a small saucepan or microwave for 1-2 minutes.
- Divide the rice among three bowls. Top each with the chicken and vegetable mixture, warm black beans, and a dollop of prepared salsa.
