Chicken Caesar Salad Wraps

  1. If not using pre-cooked chicken, quickly pan-fry 3 ounces of thinly sliced chicken breast seasoned with salt and pepper in a lightly oiled pan for about 5 minutes until cooked through. Shred or dice.
  2. In a medium bowl, combine the chopped romaine lettuce, halved cherry tomatoes, and grated Parmesan cheese.
  3. Add the Caesar dressing to the salad mixture and toss until all ingredients are well coated.
  4. Lay the large whole wheat tortilla flat. Spoon the salad mixture onto the center of the tortilla, leaving space around the edges.
  5. Place the shredded or diced cooked chicken breast over the salad.
  6. Fold in the sides of the tortilla, then roll it up tightly from the bottom to create a wrap. Serve immediately with tortilla chips on the side.
