Chicken-Cabbage Stir-Fry

  1. Combine 1 1/2 cups jasmine rice, 3 cups water, and 1/4 teaspoon salt in a medium saucepan. Bring to a boil, cover, reduce heat to low, and simmer for 15 minutes until tender and liquid is absorbed.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add sliced chicken breast and season with remaining 1/4 teaspoon salt. Cook for 5 to 6 minutes until lightly browned and cooked through to an internal temperature of 165 degrees F, then transfer to a plate.
  3. In the same skillet, add remaining 1 tablespoon olive oil over medium-high heat. Add garlic, fresh ginger, shredded green cabbage, and sugar snap peas. Sauté for 3 to 4 minutes until vegetables are crisp-tender.
  4. Return cooked chicken to the skillet, pour in low-sodium soy sauce and toasted sesame oil, and toss everything together for 1 to 2 minutes until glossy and heated through.
  5. Fluff jasmine rice with a fork and serve the stir-fry hot directly over individual portions of rice.

Notes

Using pre-shredded coleslaw mix or green cabbage keeps prep time to a minimum.
