- 1.5 pound chicken breast (boneless, skinless, cut into thin strips)
- 1 pound fresh broccoli florets
- 1.5 cup brown rice (uncooked)
- 1 tablespoon olive oil
- 0.25 cup low-sodium soy sauce
- 2 tablespoon honey
- 1 tablespoon rice vinegar
- 1 tablespoon fresh ginger (grated)
- 2 clove garlic (minced)
- 1 tablespoon cornstarch
- 2 tablespoon water
- 0.25 teaspoon red pepper flakes
- 0.25 teaspoon salt
- 0.125 teaspoon black pepper
Instructions
- Cook the brown rice according to package directions while preparing other ingredients.
- In a small bowl, whisk together the low-sodium soy sauce, honey, rice vinegar, grated fresh ginger, and minced garlic. In another small bowl, whisk the cornstarch with 2 tablespoons water to create a slurry.
- Heat the olive oil in a large skillet or wok over medium-high heat. Add the chicken strips and cook for 4 to 5 minutes until no longer pink. Season with salt and black pepper.
- Add the fresh broccoli florets to the skillet. Stir-fry for 3 to 5 minutes until the broccoli is tender-crisp.
- Pour the soy sauce mixture over the chicken and broccoli. Bring to a simmer. Stir in the cornstarch slurry and cook, stirring constantly, for 1 to 2 minutes until the sauce thickens. If desired, add the red pepper flakes.
- Serve the chicken and broccoli stir-fry immediately over the cooked brown rice.
Notes
Ensure chicken is cut into similar-sized strips for even cooking. For extra flavor, toast a sprinkle of sesame seeds over the top before serving.
