Chicken & Broccoli Stir-Fry

  1. Cook the brown rice according to package directions while preparing other ingredients.
  2. In a small bowl, whisk together the low-sodium soy sauce, honey, rice vinegar, grated fresh ginger, and minced garlic. In another small bowl, whisk the cornstarch with 2 tablespoons water to create a slurry.
  3. Heat the olive oil in a large skillet or wok over medium-high heat. Add the chicken strips and cook for 4 to 5 minutes until no longer pink. Season with salt and black pepper.
  4. Add the fresh broccoli florets to the skillet. Stir-fry for 3 to 5 minutes until the broccoli is tender-crisp.
  5. Pour the soy sauce mixture over the chicken and broccoli. Bring to a simmer. Stir in the cornstarch slurry and cook, stirring constantly, for 1 to 2 minutes until the sauce thickens. If desired, add the red pepper flakes.
  6. Serve the chicken and broccoli stir-fry immediately over the cooked brown rice.

Notes

Ensure chicken is cut into similar-sized strips for even cooking. For extra flavor, toast a sprinkle of sesame seeds over the top before serving.
