Ingredients
- 2 pound chicken breast (boneless, skinless, cut into 1-inch pieces)
- 2 tablespoon olive oil
- 6 cup broccoli florets
- 1 yellow onion (chopped)
- 4 clove garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 1 cup chicken broth
- 0.5 cup soy sauce
- 2 tablespoon brown sugar
- 1 tablespoon cornstarch
- 8 ounce quick-cook brown rice
- 1 teaspoon sesame oil
- 0.25 cup green onions (chopped)
Instructions
- In a medium bowl, whisk together chicken broth, soy sauce, brown sugar, and cornstarch. Set aside.
- Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
- Add the remaining 1 tablespoon olive oil to the skillet. Add chopped yellow onion and cook until softened, about 3-4 minutes. Stir in minced garlic and grated fresh ginger and cook for another minute until fragrant.
- Add broccoli florets to the skillet and stir-fry for 3-5 minutes until tender-crisp.
- Return the cooked chicken to the skillet. Give the prepared sauce a quick whisk, then pour it over the chicken and vegetables. Cook, stirring constantly, until the sauce thickens and coats everything, about 1-2 minutes.
- Meanwhile, prepare the quick-cook brown rice according to package instructions.
- Serve the stir-fry immediately over the brown rice. Drizzle with sesame oil and sprinkle with chopped green onions, if desired.
Notes
For an extra kick, add a pinch of red pepper flakes with the garlic and ginger.
