  1. In a medium bowl, whisk together chicken broth, soy sauce, brown sugar, and cornstarch. Set aside.
  2. Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  3. Add the remaining 1 tablespoon olive oil to the skillet. Add chopped yellow onion and cook until softened, about 3-4 minutes. Stir in minced garlic and grated fresh ginger and cook for another minute until fragrant.
  4. Add broccoli florets to the skillet and stir-fry for 3-5 minutes until tender-crisp.
  5. Return the cooked chicken to the skillet. Give the prepared sauce a quick whisk, then pour it over the chicken and vegetables. Cook, stirring constantly, until the sauce thickens and coats everything, about 1-2 minutes.
  6. Meanwhile, prepare the quick-cook brown rice according to package instructions.
  7. Serve the stir-fry immediately over the brown rice. Drizzle with sesame oil and sprinkle with chopped green onions, if desired.

Notes

For an extra kick, add a pinch of red pepper flakes with the garlic and ginger.
