  1. Cook the white rice according to package directions, typically 1 cup rice with 2 cups water, brought to a boil, then simmered for 15 minutes.
  2. While rice cooks, in a small bowl, whisk together the soy sauce, cornstarch, honey, and black pepper. Set aside.
  3. Heat the sesame oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook for 5 to 7 minutes, until browned and cooked through. Remove chicken from the skillet and set aside.
  4. Add the broccoli florets to the same skillet. Stir-fry for 3 to 4 minutes until vibrant green and slightly tender-crisp. Add the minced garlic and grated fresh ginger and cook for 1 minute more until fragrant.
  5. Return the cooked chicken to the skillet with the vegetables. Stir in the prepared sauce mixture and cook for 1 to 2 minutes, stirring constantly, until the sauce thickens and coats the chicken and broccoli.
  6. Serve the stir-fry immediately over the cooked white rice, garnished with chopped green onion if desired.

Notes

Adjust the amount of honey to your sweetness preference. Leftovers are great for lunch the next day.
