Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced chicken breast, dried oregano, garlic powder, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally, until browned and cooked through.
- Add the frozen broccoli florets and chicken broth to the skillet with the cooked chicken. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 5-7 minutes, or until the broccoli is tender-crisp.
- While the chicken and broccoli cook, melt the butter in a separate small saucepan over medium heat. Add the minced garlic and cook for 1 minute until fragrant. Stir in the pre-cooked white rice and cook for 2-3 minutes, stirring, until heated through and coated with garlic butter.
- Serve the chicken and broccoli skillet immediately alongside the garlic rice.
