  1. In a medium bowl, whisk together the peanut butter, low sodium soy sauce, rice vinegar, honey, fresh ginger, and toasted sesame oil until smooth. Set aside.
  2. Season the thinly sliced chicken breast with salt and black pepper.
  3. Heat canola oil in a large skillet or wok over medium-high heat. Add the chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and lightly browned. Remove chicken from the skillet and set aside.
  4. Add the broccoli slaw mix to the same skillet and cook for 3-5 minutes, stirring occasionally, until slightly softened but still crunchy.
  5. Return the cooked chicken to the skillet with the slaw. Pour the peanut sauce over the chicken and slaw, tossing to coat evenly. Heat for 1-2 minutes until warmed through.
  6. Warm the soft flour tortillas according to package directions. Divide the chicken and slaw mixture among the tortillas and roll them up to create wraps. Serve immediately.

Notes

For an extra kick, add a dash of sriracha to the peanut sauce. Leftovers can be stored separately and assembled just before eating to maintain crunchiness.
