  1. In a small bowl, whisk together the low-sodium soy sauce, grated ginger, minced garlic, chicken broth, and sesame oil. Set aside.
  2. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the diced chicken breast and cook for 5-7 minutes, until cooked through and lightly browned. Remove chicken from the skillet and set aside.
  3. Add the remaining 1 tablespoon of olive oil to the skillet. Add the broccoli florets and sauté for 5 minutes, until tender-crisp.
  4. Return the chicken to the skillet. Pour the soy-ginger sauce over the chicken and broccoli, stirring to coat. Cook for 1-2 minutes, allowing the sauce to thicken slightly.
  5. While the stir-fry cooks, prepare the riced cauliflower. In a separate skillet or microwave-safe bowl, cook the riced cauliflower according to package directions, typically 3-5 minutes, seasoning with salt and pepper.
  6. Serve the chicken and broccoli stir-fry over the cauliflower rice.

Notes

Ensure your soy sauce is gluten-free if strictly adhering to that dietary restriction. If you like a little heat, a dash of sriracha can be added to the sauce.
