Ingredients
- 1.25 pound chicken thighs (boneless, skinless, cut into 1-inch pieces)
- 1 tablespoon olive oil
- 1 yellow onion (small, thinly sliced)
- 1 apple (medium, cored and sliced)
- 1 clove garlic (minced)
- 0.5 cup chicken broth
- 1 teaspoon dried thyme
- 0.25 teaspoon salt
- 0.125 teaspoon black pepper
- 12 ounce fresh green beans (trimmed)
Instructions
- Pat the chicken thighs dry and season with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes, until browned on all sides and mostly cooked through. Remove chicken from the skillet and set aside.
- Add the sliced yellow onion and sliced apple to the skillet. Cook for 3-4 minutes, stirring occasionally, until softened. Add the minced garlic and dried thyme, cooking for 1 minute more until fragrant.
- Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan. Return the cooked chicken to the skillet.
- Add the fresh green beans to the skillet. Cover and cook for 5-7 minutes, or until the green beans are tender-crisp and the chicken is fully cooked.
- Serve immediately.
Notes
Leftovers store well in an airtight container for up to 3 days in the refrigerator. Reheat gently on the stovetop or in the microwave.
