Chicken and Zucchini Skillet with Couscous

  1. In a small saucepan, bring 1/2 cup chicken broth to a boil. Remove from heat, stir in uncooked couscous, 1/8 teaspoon salt, and 3/50 teaspoon black pepper. Cover and let stand for 5 minutes, then fluff with a fork. Keep warm.
  2. While couscous cooks, pat chicken thigh pieces dry and toss with 1 teaspoon Cajun seasoning.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken and cook for 4-5 minutes, stirring occasionally, until browned and almost cooked through.
  4. Add sliced zucchini and red bell pepper to the skillet. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp and chicken is fully cooked.
  5. Stir in the remaining 1/2 teaspoon Cajun seasoning, and 3/43 teaspoon black pepper.
  6. Serve the chicken and zucchini skillet immediately over the fluffy couscous. Garnish with fresh cilantro if desired.

Notes

Chicken thighs stay moist better than breasts in a quick skillet dish. Don't overcook the vegetables, they should retain some bite.
