Ingredients
- 1 tablespoon olive oil
- 2 cup chicken breast (cooked, shredded)
- 4 cup chicken broth
- 0.5 cup orzo pasta
- 0.25 teaspoon salt
- 0.125 teaspoon black pepper
- 1 tablespoon fresh parsley (chopped)
Instructions
- Heat olive oil in a medium pot or Dutch oven over medium heat. Add the shredded cooked chicken and sauté for 2-3 minutes.
- Pour in the chicken broth and bring to a simmer. Add the uncooked orzo pasta, salt, and black pepper. Stir well.
- Continue to simmer for 10-12 minutes, or until the orzo is tender. Taste and adjust seasoning as needed. Garnish with fresh parsley, if desired, before serving.
Notes
Using pre-cooked or rotisserie chicken significantly reduces the prep time. For a bit more substance, you can add some very finely diced peeled carrots along with the broth and orzo.
