  1. Heat olive oil in a medium pot or Dutch oven over medium heat. Add the shredded cooked chicken and sauté for 2-3 minutes.
  2. Pour in the chicken broth and bring to a simmer. Add the uncooked orzo pasta, salt, and black pepper. Stir well.
  3. Continue to simmer for 10-12 minutes, or until the orzo is tender. Taste and adjust seasoning as needed. Garnish with fresh parsley, if desired, before serving.

Notes

Using pre-cooked or rotisserie chicken significantly reduces the prep time. For a bit more substance, you can add some very finely diced peeled carrots along with the broth and orzo.
