Chicken and Colorful Pepper Sauté

  1. Cook white rice according to package directions, typically simmering 1 cup rice with 2 cups water for 15-18 minutes until tender. Once cooked, fluff with a fork and stir in chopped fresh cilantro and lime juice. Cover to keep warm.
  2. While rice cooks, season chicken breast strips with chili powder, dried oregano, 1/2 teaspoon salt, and black pepper.
  3. Heat olive oil in a large skillet or wok over medium-high heat. Add seasoned chicken and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove chicken from skillet and set aside.
  4. Add thinly sliced red bell pepper, yellow bell pepper, and yellow onion to the same skillet. Cook for 5-7 minutes, stirring occasionally, until vegetables are tender-crisp. Add remaining 1/2 teaspoon salt.
  5. Return cooked chicken to the skillet with the vegetables and toss to combine.
  6. Serve the chicken and pepper sauté with cilantro-lime white rice.

Notes

Add a pinch of red pepper flakes to the chicken seasoning for a spicier kick.
