  1. Bring 3 cups of water to a boil in a medium pot. Add 1 1/2 cups of uncooked white rice, reduce heat to low, cover, and simmer for 15-18 minutes, or until water is absorbed and rice is tender.
  2. While rice cooks, make the quick salsa criolla: In a small bowl, combine thinly sliced red onion, 1/4 cup chopped fresh cilantro, and fresh lime juice. Season with a pinch of salt and toss to combine. Set aside.
  3. Season chicken breast cubes with 1 teaspoon salt and 1/2 teaspoon black pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes until browned on all sides. Remove chicken from skillet and set aside.
  4. Add chopped yellow onion to the skillet and cook for 3-4 minutes until softened. Stir in minced garlic, aji amarillo paste, ground cumin, and dried oregano. Cook for 1 minute until fragrant.
  5. Stir in chicken broth and rinsed, drained chickpeas. Bring to a gentle simmer and cook for 3-5 minutes, allowing flavors to meld. Return the cooked chicken to the skillet and toss to combine.
  6. Taste the chicken and chickpea mixture and adjust salt and black pepper as needed. Serve hot alongside the cooked white rice and top generously with the fresh salsa criolla. Garnish with remaining 1/4 cup chopped fresh cilantro, if desired.

Notes

For an even quicker meal, use pre-cooked chicken from a rotisserie chicken. The salsa criolla is best made fresh right before serving for maximum crunch and flavor.
