Ingredients
- 4 flour tortillas (6-inch)
- 4 ounce pre-cooked chicken breast (shredded or diced)
- 4 ounce shredded cheese
- 1 tablespoon olive oil
- 0.5 cup tortilla chips
- 0.25 cup guacamole
- 0.25 cup salsa
Instructions
- Warm a large skillet or griddle over medium heat.
- Lightly brush one side of each flour tortilla with olive oil.
- Place two tortillas, oil-side down, in the warm skillet. Sprinkle half of the shredded cheese over each tortilla. Then, top each with half of the pre-cooked chicken breast. Sprinkle the remaining cheese over the chicken.
- Place the remaining two tortillas on top, oil-side up. Cook for 3-4 minutes per side, or until the tortillas are golden brown and crispy and the cheese is melted and bubbly.
- Remove the quesadillas from the skillet and cut each into wedges.
- Serve the Chicken and Cheese Quesadillas immediately with tortilla chips, guacamole, and salsa on the side.
Notes
Add a pinch of chili powder or cumin to the chicken for a bit more flavor if desired. You can also add thinly sliced bell peppers or onions for extra vegetables.
