Chicken and Cheese Quesadillas

  1. Warm a large skillet or griddle over medium heat.
  2. Lightly brush one side of each flour tortilla with olive oil.
  3. Place two tortillas, oil-side down, in the warm skillet. Sprinkle half of the shredded cheese over each tortilla. Then, top each with half of the pre-cooked chicken breast. Sprinkle the remaining cheese over the chicken.
  4. Place the remaining two tortillas on top, oil-side up. Cook for 3-4 minutes per side, or until the tortillas are golden brown and crispy and the cheese is melted and bubbly.
  5. Remove the quesadillas from the skillet and cut each into wedges.
  6. Serve the Chicken and Cheese Quesadillas immediately with tortilla chips, guacamole, and salsa on the side.

Notes

Add a pinch of chili powder or cumin to the chicken for a bit more flavor if desired. You can also add thinly sliced bell peppers or onions for extra vegetables.
