Ingredients
- 1 tablespoon olive oil
- 1 pound chicken breast (cut into 1-inch pieces)
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 3 clove garlic (minced)
- 1.5 cup chicken broth
- 0.5 cup milk
- 8 ounce fettuccine pasta
- 0.25 cup Parmesan cheese (grated)
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 2 cup baby spinach
Instructions
- Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat. Season 1 pound chicken breast pieces with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Add to the skillet and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove chicken from the skillet and set aside.
- Add 3 cloves minced garlic to the same skillet and cook for 1 minute until fragrant.
- Pour in 1 1/2 cups chicken broth and 1/2 cup milk. Bring to a simmer. Add 8 ounces fettuccine pasta, breaking it in half if needed to fit. Stir well, cover, and cook for 8-10 minutes, or until pasta is al dente, stirring occasionally to prevent sticking.
- Return the cooked chicken to the skillet. Stir in 1/4 cup grated Parmesan cheese, 1 tablespoon lemon juice, and 1 teaspoon lemon zest until the sauce thickens slightly.
- Stir in 2 cups packaged baby spinach until wilted. Serve immediately.
