- 1 tablespoon olive oil
- 1 pound ground turkey
- 0.5 cup yellow onion (chopped)
- 2 clove garlic (minced)
- 1 teaspoon dried Italian seasoning
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 can crushed tomatoes
- 5 ounce fresh spinach
- 8 ounce quick-cook pasta
- 0.5 cup shredded mozzarella cheese
Instructions
- Bring a large pot of lightly salted water to a boil. Add 8 ounces quick-cook pasta and cook according to package directions until al dente. Drain and set aside.
- While pasta cooks, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound ground turkey and 1/2 cup chopped yellow onion. Cook, breaking up the turkey, until browned, about 5-7 minutes. Drain any excess grease.
- Stir in 2 cloves minced garlic, 1 teaspoon dried Italian seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1 minute until fragrant.
- Add 1 can crushed tomatoes and 5 ounces fresh spinach to the skillet. Cook, stirring, until spinach wilts, about 2-3 minutes. Stir in the cooked pasta and 1/2 cup shredded mozzarella cheese until cheese is melted and combined.
- Serve hot.
Notes
For an even quicker meal, use pre-minced garlic. If you prefer a little heat, add a pinch of red pepper flakes with the seasonings.
